It usually happens, at least in the kitchen, that it is everyday life itself that raises the most doubts. The fuet that we prepare for the child for snack, the way to salt the meat, or whether or not it is necessary to wash the rice before its preparation. The readers of the Sabe Bien office are clear that starting the house from the roof is useless between the stoves and, therefore, they want the most mundane doubts to be resolved before they start with various artifices. The professors of the Higher Hospitality Center of Galicia (CSHG) once again put their knowledge on the table. We share them.

How do you prepare a good papillote?

The papillote is a way of presenting and cooking a product with vegetables, normally cut into Julienne strips, and aromatic herbs. The way to do it, preferably, is with parchment paper, although aluminum foil can also be used. Put butter or oil on this paper, add the main product and the julienne. Once the ingredients are placed, it is wrapped with some folds (like a pie), it is closed well and put in the oven to puff up. It is served very hot.

Can you eat the skin of the fuet?

Yes, you can eat it, since the skin of the sausages is nothing more than natural casings; therefore there is no problem. Another thing is that in some sausages the skin is thicker and it is not so appetizing to eat it, but in the case of fuet it is usually quite thin.

When should you add salt to meat?

It has always been said that salt dehydrates and that is why it should be added once the meat has browned, but that happens if the salt is left in the product for a long time. In short, if you don't add the salt too far in advance, there is no problem.

Do you have to wash the rice before cooking it?

Surely you have heard that rice has a high content of arsenic, and the reality is that part of that arsenic is lost if we leave the rice to soak and cook it in plenty of water, discarding what is left over. In any case, there is no need to generate alarm, since this measure would be necessary if we were to consume rice every day or very frequently. If this is not the case, it is not necessary to wash it. In fact, washing the rice or not can help or harm a recipe depending on the type of dish we want to prepare. To obtain a creamy rice or risotto I recommend that you do not wash it; however, if you prefer the rice to be looser, for example to prepare a rice salad, then you can refresh it beforehand with water.
